When it comes to working with the best produce and suppliers, we look no further than @lochduartsalmon and @flyingfish525.

The salmon is cured then smoked in our terrace smoker, simply sliced and plated with a squid ink emulsion, foam made from cucumber seeds and yuzu kosho. Cucumber is then charred and compressed in the same juice used to make the foam.

The dish is finished with a shrimp cracker and a granita made from sorrel.

A fantastic, fresh way to start a meal.
